What goes wrong if you don't harden off properly?

This is only my second year growing plants (mostly vegetables) from seeds. I've been hardening off most of them since Monday, but as I re-read instructions, it seems I may have rushed the process. They had a full sunny day on their 3rd day out. They all look fine, and I was thinking of planting them this weekend, but I wonder if I should wait another week?

A few weeks ago I had some lettuce seedlings that were crowding the others and I planted those outside - completely forgot about the hardening off process. Well they didn't die, but they haven't grown much eather. I don't think it's temps or soil condition. Can this happen when you don't harden off? I always assumed they'd just die, and I think I'd notice that. :) But are there other ill effects that aren't as easy to see in the seedling?
