Upright /Narrow Width Rose for Hedge? Multi-Season Interest Bonus

I am interested in creating a hedge of roses along 40'of south facing busy alley way. My original idea was to plant a mix of Rosa Rugosa "Alba" and Therese Bugnet for a mix of blooms, fragrance, winter interest (Therese's red canes and rose hips from both) plus offer edible rose hips with surplus for the wildlife. I am limited to about 3' wide. Though these would be upright and could be pruned height wise but what about width? Should I look at something that arches? We have William Baffin by the house and it arches a bit width wise offering perennials below a little relief from the hot southern exposure..

Maybe I am crazy thinking this will work but with a 100+ year old purple folk victorian..roses would be perfect..Curious about your thoughts and thank you in advance.
