Phal stem - should I cut?

I have a phal that bloomed all through May and JUne. Right now there are no flowers, but a new leaf is growing. The stem is gray, not green, and appears to be hollow and brittle. Am I supposed to cut it off at the base? I trimmed it back slightly to where it flowered, but it looks dead to me. This was my first orchid, though I have since acquired 4 others, all phals. I have been at the AOS and COC websites but couldn't find info. The stems on my flowering orchids are all green, which is why I noticed the stem on the older orchid. Any suggestions welcome!
