When to stop soil building? How much is enough?

ORGANIC SOIL BUILDING

Organic gardeners are constantly told feed your soil and the soil will feed your plants. There are basicly two schools of thought. One builds soil to sufficent levels and it seems to me that the other builds the soil up beyond what the plants need as to have more nutrients available for next crop or next season or two, or three. I have to wonder at what point would the gardian of the soil stop applying amendments. Based on your study/experience what levels are ideal. I would like to see some numbers... I`ve read recently for example, that pushing K TOO hard will make for flavorless vegetables. What is too hard? Just curious to see what what you people think... Thanks for your time...
