pH changing in vegetable garden

different crops need different pHs. when i want to increase the pH for a specific crop i usually add wood ash to that bed. i've never done anything to lower pH except toss in some peat moss. (i don't really know if peat moss is too effective at this.)

what if i want to plant potatoes in a plot where i've used wood ash the previous year? does the wood ash lose it's alkalinity over the growing season? if i add sulphur this spring, will the soil remain acidic next spring? it seems like kind of a roller coaster. i've never used sulphur, and i would test the soil before adding it. my question is, how quickly and effectively do wood ash and supphur change the pH, and how long do they last? are there natural pH changing methods that are better? and, are potatoes the only vegetable crop that generally requires you to lower the pH?
