spring regrowth on last years kale

My red russian kale crop did great again this fall/winter and I look forward to it leafing out again in the spring.........the stems are dead and soggy down to near the ground where the stems become firm and viable.........I usually just let them leaf out but now I wonder if I should prune off the dead part to encourage new growth...........I have about 1200 plants so it could be a bit of work but it could give me something green to sell at the local farmers market.......Thanks
