It's true. The fruit will be of variable quality and the seeds won't be true to type they will be hybrids. If you are going to plant self pollinating use only self pollinating of the same hybrid type. If you aren't using self pollinating then you will need different types to cross pollinate. In this case, people usually pick a type of persimmon because they like it's taste and so a similar tasting persimmon that ripens earlier or later than your favorite as the cross pollinator makes sense. In my case I was recommended, if I remember right, a Yates or a Prok, by this nursery: http://www.nolinnursery.com/Persimon.htm He is a Ag graduate from UK with many years of experience. So if I was like you I and wanted two trees I'd buy 2 Yates or 2 Proks. You should buy 1 or 2 or the same variety if they are self pollinating. I'm only buying one so I don't have that problem. I have a Black Gum (aka Black Tupelo) in my yard already and it's you've seen one you know they are closely related to persimmons. I'm not sure it they can 'cross pollinate' persimmons like donkeys & horse can cross breed though. The exact same thing happened to me. Yes the fruit will ripen off the tree.

My Fuyu in Northern Virginia is about 10 years old. It has had years where it produced lots of fruit initially and had a big June fruit drop and it has had years where it did not set a lot of fruit. However, last year, after a particularly harsh winter it produced a lot of fruit and had minimal June fruit drop. Point is that if you keep it appropriately watered, fertilized and it is in a sunny place it will have good and bad years. I believe the harshe winter helped production. As I said, I think it's an experiment as most seed grown efforts are, even without the cold being taken into account. I had below 0 (down to -5 twice) for several days in a row that did no damage to my fuyu or hachiya during one of those vortexes. Had fruit each year post vortex on my persimmons. Pear and cherries were fine. Did kill to ground my figs, which finally roared back to serious fruiting this year. Anyway, I think it will continue to grow fine albeit slowly - it's 5 years old at 4 ft. But keeping it below 5 feet would seem to be a limitation which your zone and freezes will help with, but I doubt it will stay there without pruning.
