Fruit quality vs water and vegetative growth

I've posted quite a bit here about the relationships of fruit quality to water status. My observation is that some degree of water stress is needed with many fruits to maximize fruit quality. But expensive and complicated equipment is needed to quantify plant water status.

My feeling is that by observing the growth status of our trees we can ascertain plant water status in a meaningful way. My observations suggest that the proper level of water stress to benefit fruit quality is about at the point where vegetative growth ceases. If the tree starts losing leaves or looks wilted, that is too dry. If the bark is slipping and the tree is growing rapidly, that is too wet.

So my question is do your trees shut down vegetative growth in summer or do they keep growing? Any observations welcome.
