Looking For Opinions On Red Fleshed Apples

I am wanting opinions on your favorite red fleshed apples and why. My primary use will be for pies and I want it to hold its shape after cooking. Sweet/tart flavoring would be great too, especially if also has dessert quality. I want it to ripen mid September or later (up until mid-October). So far I'm wondering about Pink Pearl, Hidden Rose, Pink Pearmain, Kiedzwetzyana and Pink Princess.

I already have the following apples growing: Chehalis, Honeycrisp, Karmijn de Sonnaville (my fav), Sweet 16. Bench grafted and whips are: Holstein, Alkemene, Lord Lambourne, Kandil Sinap and Ashmead's Kernal. I plan to add Newtown Pippin, Northern Spy and possibly Freiherr Von Berlepsch this year.
