Apple Tree Recommendations

I am looking for recommendations for two apple trees. I only have space for two semi-dwarfs and understand I need two different types. I would like a crisp sweet-tart apple that keeps well and is fairly resistant to pests and disease. I also need to be able to can/cook/dry/bake with at least one of the apples.

We are hoping to get these trees ordered this month along with some pear and cherry trees I have already decided on. I am simply having trouble with a decision on the apples. I have researched various types (heirlooms and hybrids), but there is so much information and sometimes it is conflicting (one place says the apple is a keeper another says it breaks down quickly in storage, etc.), plus when I am limited to two trees and we love apples that makes it more "difficult."

We live in the upper range of zone 5 and typically have temps reaching below 0 during the winter.

Also, we have never done anything with fruit trees in the past, so I am newbie to this.
