Help with growing Fuji apple in Southern California

Hi, I'm completely new to growing fruit trees, but I was enticed by the thought of growing real, fresh, organic apples.

My problem is, I live in Los Angeles, where it's very hot. From what I've researched, the Fuji's a good tree for SoCal. But what should I pollinate it with?

Considering I live in Los Angeles, I don't have many options, due to the heat.

Everybody recommends apples that require way too many chill hours for my location. I also prefer very sweet, juicy apples. Not a major fan of tart, dry apples...

Any suggestions would be lovely.
