Obviously my climate and yours are very different, but our overwintering crops include parsnips, leeks , Brussel sprouts and other winter brassicas such as kale and cabbage. All have a very long growing season and all are sown now or sooner. The brassicas will be planted out in May or June. The parsnips are sown in situ and the leeks can be either done in situ or transplanted. You might also try favas and peas but they don't need to be sown until October/November.

I started soaking/sprouting/planting seeds last week. The seedlings should be ready to go into the ground once it begans to cool down in Sept or Oct. I did the same last year, and had really good results. The seedlings grew very well -- much better than the ones I planted this spring. Quite a few of them started blooming and multiplying this year. Don't put them in the fridge. You garage is probably okay, the average temp in probably pretty warm overall. You can plant them soon, next week or the week after that. The only worry are frosts after they emerge, but then you can move bags around or cover them easily, that is what I do. Room temperature is not going to ruin them before you plant them. You WANT the "seed" potatoes to sprout a little, you don't want them totally dormant. If the potato sprouts are just nubs under a half of inch or less, do not worry, they will be fine. You just do not want 6 inch long spindly growths that you have to break off. Even then you can get them to grow. Potatoes are easy, don't worry too much. Johnny's sent you the potatoes at the correct time, to give you time to sprout them a little.
