(New) Apple and Plum pruning strategy?

I have a bunch of immature apple and plum trees that I have been pruning and spreading and I had a thought that I wanted to run by the more experienced folks in this forum. Instead of going for the open vase type of shape, should I attempt to have the scaffold branches form the "spokes" on a wheel? In other words, should I try to have my trees get to about 4 feet tall and then spread the branches to almost horizontal all the way around the trunk? My thinking is that this would keep all the branches and fruit at an easily accessible level and it would also allow them to get plenty of sun.

Is this possible?

Is this desirable?

Why wonÂt it work?

If I did this, how many "spokes" or scaffold branches should each tree have?
