Over-watered young fruit trees - will they survive?

About 6 weeks ago I bought some healthy-looking 3 year old dwarf fruit trees: Italian plum, Stella cherry, McIntosh apple. I kept them in their containers for a few weeks and then planted them according to the nurseryman's instructions. At this point they looked good. I watered them deeply and then I think I began to water them too often. The leaves on all three trees have shriveled up. I haven't watered them in about 2 weeks but my moisture meter shows that the soil is still quite wet. Can they recover? Is there anything I can do for them?
