When to harvest cukes and acorn squash

So I just started gardening again after some three decades, and the three varieties of plants have survived insects, torrential rainfall and my own incompetence: tomatoes, cucumbers and acorn squash. I also have a few string beans, much more mint than I need and a very productive rhubarb patch, but that's not my concern at the moment.

It's the cukes and the acorn squash that have been worried. I'm starting to get a bunch of cukes and quite a few of the squash, with more on the way. Some of the squash is dark green and several of the cukes are about six inches long. My question is: when do I yank 'em off the vine? How long should I let the cukes grow and when do I know the squash are ready?

Any suggestions on this are appreciated.
