Lack of flavor in melons and winter squash???

I've grown many delicious melons and squash over the years, but my past two attempts (last fall and this spring) have proven quite frustrating. Four types of winter squash and 5 different melons have all produced healthy, vibrant plants and gorgeous fruit that was the most bland tasting cardboard that you could imagine.

The only thing that I can deduce is some sort of mineral/nutrient deficiency in the soil. All of the melon and squash have been produced in three new raised beds that I built last summer and filled with something akin to Mel's mix (lots of different composts and haydite). The beds have produced amazingly lush, energetic plants. I'd say they are some of my best producing gardens ever - just don't taste the cucurbits!

Now, does anyone have any idea what would cause such a bland taste? Its not an over watering problem. Is there something that the bedding mix could be missing?
