Deer ate beets - what now?

Came out to the garden today after some heavy rains here in VT. Apparently some 4-legged giant rat aka deer, came in and ate the tops off of all of my beets. There are some leaves left but not much, and the roots were just getting to about large marble size, some to 1" or better. I had been keeping the deer away with a spray-on Liquid Fence, but apparently that washed away in the rain and the deer found out. They also ate my cabbage plants and pulled three of them right out of the ground.

So what I have is about 24 square feet (raised bed area about 3' x 8') of topless beets. Should I leave them, try to prevent the deer, and hope they grow back, or should I pull them all up and plant new seed? It's early enough here that I'll have a couple months before heavy frost, but I don't expect much out of them after mid-September. I'm very unhappy because I like fresh beets and this was an awesome crop - we had been putting beet greens in salad and were looking forward to a decent harvest.
