mid-summer, what to plant, spinach, or squash ??

It's mid-summer here in southern Illinois and, it's really bothering me that I have one row in my garden that is just sitting idle!

What should I plant that (A) I can EAT and that (B) doesn't mind high heat and humidity of mid-summer?

I was thinking spinach, but, with the high temps, the seeds just may not germinate, I'm thinking of the old stand=by summer squash and zuchinni.

Any thoughts ????
