Wood to stone retaining wall

Please first look at the photo. I am replacing the wooden steps alongside this retaining wall of 6"x6" beams by interlocking stones. I have currently built to just underneath the shown beams.

HOW DO I CONTINUE ??!!

1) I fear that if I pull out all the wooden beams, then earth will start to tumble down before I can get the interlocking stones in place.

2) Do I need a full course of Pisa 2 interlocking stones at the bottom, or can I build upwards in a triangular shape, with the apex at the bottom and the base of the triangle at the top ?

3) How do I build the retaining wall in conjunction with the new steps ? e.g. stop building the steps and start on the wall, or continue the steps until I get to the base of the retaining wall, etc. etc.

Advice/opinions would be REALLY appreciated. Thank you.
