Growing flowers/ plants for wedding next May

I have been pretty successful with growing vegetables in containers and this year have tried sunflowers (the medium size) and they are growing very well. I am open to suggestions for what I can grow myself here in NC for my wedding next May. I am incorporating sunflowers and would also like to grow thistle. I am not sure what I should start now for next year, or wait until the end of the winter as I did for the sunflowers. Our wedding will be very "outdoorsy" and rustic, not huge delicate/ornamental flower (such as roses or lilies) fans...

I wanted gardenias at our wedding which by the way our anniversary is Today:) But since we got married in June it was suggested to use something else. If it were me I would grow gardenias. My mother used to have a beautiful gardenia tree and she got hundreds of them off in a season. I am sure that is where my love of gardenias came from.

I work as a florist, and we use a lot of my plants in wedding arrangements and hand flowers. We use a lot of Dusty Miller in boutonniÃ¨res and bouquets. Rosemary looks pretty too (but the smell can be a bit much).
I would go ahead and get a few types of Ivy started now, so that they have time to fill out in the next year.
There are some really pretty Rudbeckias that are easy to grow in containers. They also last really well as cut flowers.
Others that might work well for you would be Yarrow and salvia. I would plant some ornamental kale and cabbages this fall, those look surprisingly cool in bouquets.
The plants that I think would be the best to plant now would be the greenery you would like to use. If the greenery you want can be overwintered indoors or is an evergreen in your area, go ahead and plant some so that you get the most out of the plant by next year.

Given as favors, I would give relatively large bulbs of something less expensive rather than small lily bulbs (which the JP bulbs are going to be) for this reason: Lilies are 'fresh' bulbs and never dormant. They need immediate planting after they're received from the shipper. When your guests plant their bulbs, they are going to expect something spectacular. Unless they're gardeners familiar with lily culture they may be disappointed by a small, inexpensive bulb that is slow to perform. In the fall, hyacinths might meet your needs. For non-gardeners, they can be forced in water and tossed after they bloom. People with flower beds can incorporate their hyacinth and it will return for a number of years. Pink or blue hyacinth bulbs are colorful as well. You'll need to warn people, however, that hyacinth bulbs handled with bare hands may have a tendency to make one itch. You also get a pretty bloom from the slightly smaller (less expensive) hyacinth bulbs-- they just don't have as long a stem, which tends to fall over anyway. In my experience, hyacinths are less likely to be eaten by squirrels than crocus, unless you use Tommies if you're giving spring crocus. You might research fall crocus; they are shipped in early September. Shipping dates may be a concern, too. Gladioli in May or June would work well. I've had good results from glads from the dollar store at 4/$1, so you could use inexpensive glad bulbs and expect good results. They're easy; plant and water. Glad bulbs are colorful too if you choose dark colors. I hope you find a bulb that will meet your needs and budget and give your guests something to look forward to bloom and remind of you for years. Our technicians wife is scurrying around, already lining up flowers on a budget for their son's Aug 9 wedding. That bride would like to use a lot of hydrangeas for very full arrangements and they've found a grower through a local farmers market. He's even agreed to let them cut for themselves, the day before the wedding. (OK, that's sounding a little to me like a mother in law going almost sleepless the night before, but I'm staying out of it ;)) She's feeling pretty confident in the availability of enough fresh flowers through farmers market sources for a lovely wedding and reception. There is a wholesale cut flowers market in Seattle too that has hours open to the public one day a week for 4 hours no buyers card required, it wouldn't surprise me to find that in most major cities, why don't you try googling your own, see what you might come up with.

Hi Carrie, I think you could probably get calla lilies (Zantedeschia aethiopica or albomaculata) to bloom for you in time for your wedding, but it would be cutting it a little close. According to my records from last season I planted calla bulbs on April 20th and coincidentally I harvested my first stem on exactly June 6th, 2008. I think you could push them to bloom a week or so sooner if you planted them a little earlier, maybe April 1st, and then covered them with a cold frame or small plastic hoop tunnel to warm the soil up to at least 55 degrees to get them growing. They are also commonly grown in pots, so if you have some room indoors you should be able to get them blooming earlier in a warm house. If you really wanted to try to grow callas outdoors in time for your wedding it would be a good idea to try and find a gardener or botanical garden near you that leaves callas in the ground over winter and keeps good records. Ask them what day their first calla bloomed and on what date you could expect to cut enough for your wedding given that you plant them on April 1st. - Steve Here is a link that might be useful: Pacific Callas

Start the dahlias from tubers, for best results, please buy them from a reputable source. Plant them when the soil has reached 60 degrees. (yah, I actually take the soil temp, otherwise there is too much chance of rotting). Choose a cultivar that is notated for cutting. Here is a link that might be useful: The Big List

Do you know where I can find information on what the evergreens are in our area? I am on the southern coast of NC a few miles from the beaches.

I'm not sure of the difference between blooming times between my zone - 6b - and yours, but lily-of-the-valley is my instant memories for May flowers. They smell wonderful, dainty, need shade, are perennials, and very rustic. My memory is when my "little" brother was born (he's taller than me now) on May 13th. My grandmother had me pick a huge bouquet of lily-of-the-valley for my Mom in the hospital. Little flowers - including the stem, it was just the right size for my 11 year old fist. Next time to plant some is this autumn - at least, around here.
