seedlings falling over and radishes too shallow?

hey all,

this is going to out me as a total newbie, which i am, but: a lot of my wee seedlings -- beets and carrots in particular -- are so delicate that they entirely fall over when i water them. some of them do spring back, but many of them sort of just lie there, even once they've dried off. is there a somehow gentler way i should be watering them? this seems to happen right away; i don't *think* i'm overwatering.

also, some of my radishes look like the roots (nowhere near mature -- still just skinny little things) poke up quite high above the soil, which of course also increases their precariousness. does this mean i planted the seeds too shallowly? is it possible to carefully dig them up and re-plant them deeper? is this not a problem or are they a lost cause?

i have the feeling these are extremely naive questions, but i guess that's my learning curve.
