Amaryllis - bare root in peat or paper

We're in temporary quarters for the winter and not enough room for my usual pots of dormant amaryllis. I'm intending to take them out of the dirt, rinse them off, let them dry well, and then put them in a box of loosely shredded paper (or I could buy peat moss). Does anyone have any experience with getting them to go dormant and caring for them over the winter this way? Is there a better way? Thanks.
