Sowing annuals around perennials & bulbs

Hi, I'm usually on the Cottage Garden Forum, but have questions for all the annuals experts here, too.

I want to sow some annuals among perennials throughout my garden (fall and spring direct sowing) to get early spring color before the perennials come up. I'm in zone 7, so I'd like April and May color. My perennial garden peaks in June and July.

I've been looking at poppies, larkspur, clarkia, nigella as possibilities.

Anyone have "best practices" about the best way to do this so that I don't end up with a lot of dying foliage? When getting spring blooms, do I leave the seed heads to reseed...or, plan to plant again the following season? I'm accustomed to leaving heads in the fall, but I usually deadhead during spring and summer.

Also...I'd like to have more late summer/early fall blooms (August-September) blooms besides mums that I can use for cut flowers. Any ideas? Zinnias? Dahlias?

BTW, I need DEER and BUNNY resistant annuals to use.
