Caramelizing sugar
Comments (2)Jx, thanks. I'm going to try this too as I make flan frequently While in France, I found bottles of caramelized sugar and brought 4 bottles home. It was terrific and now that I have used it all, I will need to go back to making it myself. I have found different brands in the many Spanish grocery stores here but they don't have the depth of taste....See MoreAnyone make caramel(s) in the microwave? Wondering...
Comments (13)That recipe does look good, now I'm not sure which to try myself. Lars' recipe looks simpler than this recipe a friend assures me is good. Maybe I'll need to try both. I love caramel & really been intending to try making some (other than the sweetened condensed version) Caramels 2 c sugar 1 cup brown sugar 1 cup corn syrup 1 cup evaporated milk 1 pint heavy whipping cream 1 cup butter 1 1/4 t vanilla extract Grease 12x15 pan. In pot, combine sugars, corn syrup, evaporated milk, whipping cream, and butter. Monitor heat with candy thermometer while stirring. When thermometer reaches 250 deg remove from heat. Stir in vanilla. Transfer to prepared pan and let cool completely. When cool cut into squares and wrap in wax paper to storage....See MoreKAW: salted caramels
Comments (24)kailuamom your toffee looks absolutely delicious! Do you use pecans? As for online sales, it's pretty difficult to make money. My friend started her business after the death of her husband as a way to work through her grief. She didn't care if she made any money at all, she just wanted something to keep her busy. As the mom of teenagers, her target market was families with kids in high school and college. She sells cookies by the dozen and care packages with mix-and match cookies, trail mix, tea and hot chocolate. She ships the same day she bakes because she prides herself on freshness, and the cookies really are wonderful. The challenges have been to find an economical shipping method, and come up with packaging that's attractive, sturdy and inexpensive. The ingredients themselves, while high-quality, are not the biggest expense if you want to pay yourself for your time. I think she's concluded that the only way to make money is to get to a point of very high volume, which is difficult to do unless you've got already got a bakery of your own and are selling retail out of a storefront. I've done the math on the caramels and it's not all that lucrative either. I make them because I enjoy the process....See MoreCaramel Macchiato Banana Bread
Comments (8)The butter makes it look positively decadent! But maybe you need to cut it into fingers and toast it hard so you can dunk it in coffee? Your first photo reminds me how different perceptions are. I've been curling up with a couple of throw blankets and fingerless gloves the last few evenings because it's so chilly. The thermostat says 73° F. :D I can't even imagine what 25° might be like. I've been in a walk-in freezer, but wasn't that cold because you walk back out again and kind of carry the warmth with you. It looks pretty from the warmth of my (goosefleshy knees wanting a cover) desk. :)...See Moreaprille
