dust bowl dining

One branch of my heritage is from Arkansas. Traveled out west with the dust bowl. (Arkies.) I remember some meals my grandmother (Ada) made for us kids when we were little.

They were pretty good actually.

Fried sliced onions (almost caramelized, but not quite there.) fried in bacon grease, served with sliced garden tomatoes. Salt and pepper.

Boiled potatoes, fried with eggs, bacon or sausage sometimes added.

Fried balogna sandwiches with mayo. (better than it sounds.) Or fried with corn, peas, and potatoes. We kids embellished with Ketchup.

Canned pork n beans, simmered with diced onion and brown sugar, on buttered toast.

Garden string beans cooked forever with bacon and onions.

Canned preserves from ripe peaches from the tree, with pineapple and a few maraschino cherries.

Im sure Im forgetting some, but these were OK. Not stellar, but filled us up, and had lots of flavor actually.
