Comments (30)Yes, I did Melly - half light brown sugar added to the peaches, the other half of the sugar is cane sugar added to the pan. Used the last of the bottle of Frangelico, just barely 6 oz, in place of the rum. Like you said about the peaches, the nectarines were sorry but the jam is fantastic. I figured the Frangelico being hazelnut would do the same thing for nectarines that almond does for peaches. I made your Peach Vanilla Almond (no beans) Jam today, with clear vanilla extract (1 tsp) and almond extract (1/2 tsp) added at the end. I got 6 8-oz jars, plus a half dozen chunks and some syrup left in the pan. I had boiled the pits (some not quite ripe so chunks left on the pits) and peels, planning to make the Peach Honey or syrup, but had 4C of juice so decided to put that in the pan with a small slice of ginger and a quart of frozen (thawed) blackberries from last year, pulled some berries out after heating to dissolve the sugar, used the same "French plunge" method adding the reserved berries after the syrup was almost gelled. I'm not sure I have a good set, and most of the fruit ended up in the first 4 jars (I got 5), and it's floating, but I'm calling it "Preserves" if it doesn't set hard. I got another 2 jars of "jelly" (or syrup?) I processed and then another almost 12 oz (10 oz?) I put in the fridge and boy it tastes yummy. Not bad for 4 lbs of peaches and a quart of berries (and 10C of sugar, and all day)! The jelly is such a beautiful color (except for a stray seed here and there) that I think next time I'm just going to add blackberry juice instead of whole berries and see whether that has enough pectin to make the peach juice set. I really prefer the taste of no-pectin preserves. Next time I have peaches, I'm thinking of trying the Helen Witty Peach-Rum Jam. Comments (4)Our favorite is to use the Annie's Salsa recipe - but sub half the tomatoes with peaches. (Peaches are more acidic than tomatoes, so this is a safe substitution). We use that one as your basic chips and salsa type of salsa. I also like Katie C's peach salsa - which is all peaches with onions and peppers, no tomatoes. We use that more with cooking - salsa baked chicken or salsa topped fish. I'm linking the Kati C recipe. Comments (1)I just make my regular vanilla icecream and add chopped and welld rained frozen peaches....I put about half of the peaches in the blender to make puree and chunk up the rest..... But unless you either add some extra heavy cream or booze, it will get icy. I make a custard with 4 eggs and 2 cups of milk....when it coats the back of a spoon remove from heat and add a cup of sugar and stir to dissolve, add 2 cups of heavy cream and 2 tsps vanilla.,...cool and freeze. For peach, puree a cup of peach slices and add to the icecream mix....add some chunks if you wish....and 2 Tablespoons of peach schnapps. The alcohol keeps it from freezing into a solid chunk. Comments (3)Spacific, I love "Mes Confitures" and one of my daughters favorites is "Raspberry with Chocolate." Here are two of my favorite peach recipes. They really taste like fresh peaches. So-o-o much better than any store-bought jam. Karenforroses posted this one a couple of years ago and our family loves it (Thanks, Karen, if you are out there!) GINGER PEACH JAM 8 cups pitted, peeled and chopped peaches, slightly mashed (about 11 large peaches) 4 Tablespoons freshly squeezed lemon juice l l/2 packages (l.75 oz each; about 6 tablespoons) powdered fruit pectin 7 cups sugar 1 Tablespoon finely chopped crystalilized ginger l/4 tsp. freshly grated ginger root l/2 tsp. freshly ground nutmeg l/2 tsp. ground cinnamon Pinch of ground cloves Pinch of ground allspice Grated zest from l/2 lemon Sterilize jars, rings & lids in boiling water. In a large heavy saucepan over medium heat, bring the peaches and lemon juice to a boil. Add the pectin and return the mixture to a boil. Stirring constanty, slowly add the sugar. Stir in the crystallized ginger, fresh ginger, nutmeg, cinnamon, cloves, allspice and lemon zest and continue to boil, stirring constantly for 1 minute. Remove from the heat and skim any foam from the top of the jam. Carefully ladle the jam into sterilized jars, leaving l/4 inch space between the jam and the neck of the jar. Wipe the rims of the jar. Cover with the flat lids and screw the bands on, being careful not to tighten the bands too tightly. Seal the jars according to manufacturer's directions. (I give them a 10 minute water bath). Unopened jars of jam will keep for about a year on the shelf. Jam should be refrigerated once it is opened. Makes about 12 half-pints or 6 pints This one's great, too! PEACH ORANGE MARMALADE from "Complete Idiots Guide to Jams, Jellies, and Preserves" Enjoy a wonderful summer peach taste, accented with citrus. If giving it as a gift, you might want to add a little orange liqueur. Prep time: 50 minutes, Cook time: 25 to 30 minutes, Makes about 8 half-pint jars 1 medium orange 2 medium lemons 2 Tabs. Lemon juice 1 cup water 2 lbs peeled, pitted, finely chopped peaches, about 8 large [8 large peaches would weigh closer to 4 lbs, I think bI used 5 big peaches and 4 or 5 nectarines] 1 (1 3/4 oz.) pkg. powdered fruit pectin 7 cups granulated sugar 2 Tabs orange liqueur (optional) Cut orange and lemons into quarters; remove seeds and thinly slice or finely chop. Place prepared citrus fruit and any juice, water and additional lemon juice in a medium saucepan; bring to full boil over high heat. Reduce heat; cover and simmer for 15 to 20 minutes or until rind is softened. In a Dutch oven or large heavy-bottomed pot, place rind plus liquid and peaches; stir in pectin. Bring to full boil over high heat, stirring constantly. Stir in sugar; return to full boil. Boil hard for one minute, stirring constantly. Remove from heat; stir in orange liqueur, if using. Skim off any foam. Stir for five to seven minutes (this will prevent floating fruit). Ladle into sterilized jars to within 1/4 inch of rim; wipe rims. Apply prepared lids and rings; tighten rings just until fingertip tight. Process jars in boiling water canner for five minutes. Let rest at room temperature until set.
