mezcal and tequila

Is 'fermented' a key word here? Tequila for sure, not sure about mezcal.

Rusty - the only real difference is tequila is made from a specific Blue Weber Agave primarily in Jalisco. Mezcal can be made from one of the other 30 or so other varieties of Agave plant. There is also a difference between the two in how the juice is extracted from the Agave hearts before the fermentation.

Rusty, iirc from chemistry and several visits to distilleries, fermentation occurs in all alcoholic liquors. It happens when whatever ’source product’ (corn, agave, wheat, etc) is liquified and cooked, it turns starches into a fermentable fructose (sugar). Then it’s mixed with yeast and allowed to ferment.

Are distilled products also fermented? I thought there might be a difference between them, which is why I said I wasn't sure about the mezcal. Thanks for the info!.
