Quick Question re: Annie's Chewy Molasses Cookies
Comments (5)Just following up to say how much we love these cookies! I'd been wanting to try them for a while, but kept eating the crystallized ginger before I could make them....... I used about 3/4 cup chopped ginger, based on the suggestions (from ginger lovers) in previous posts. I found mine needed a little more baking time than the 15 mins. in order for them to set up properly. Since the crystallized ginger essentially melts into the batter while baking, the extra 1/4 cup added more moisture. I ran a dozen up to my parents after dinner - my Dad loves molasses cookies - and they thought they were fabulous. This is one recipe I know I'll make again. Comments (18)I think I'll call them Annie's Crack Cookies from now on. LOL You guys should've been here as Erin was writing her reply above. Numerous attempts and misspellings made her grumpy and she'd yell at me about how to spell something. My favorite part - "And I sat down in the chair and stretched for a few minutes and I watched TV for another few minutes and I stretched again and I watched TV again so anyways my mom and I just wanted to tell you how delicious the cookies were." Comments (2)I made a batch last weekend and discovered if I put them on the top rack of my oven, they got cracks but on the middle rack they didn't. My oven is not convection. (And no, not really TOP rack--just the two racks both as close to the middle as possible so I could bake two sheets at a time.) HALLOWEEN MOLASSES CUT-OUTS These cut-out cookies will charm your Halloween guests. Preparation time: 1 hrs Baking time: 8 min Yield: 4 dozen cookies Cookie Ingredients: 1/2 cup LAND O LAKES® Butter, softened 1/2 cup sugar 1/2 cup molasses 1 egg 1 1/2 teaspoons vinegar 2 1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground nutmeg Frosting Ingredients: 4 cups powdered sugar 1/2 cup LAND O LAKES® Butter, softened 2 teaspoons vanilla 3 to 4 tablespoons milk Decorator sugars Combine butter, sugar, molasses, egg and vinegar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add all remaining ingredients. Beat, scraping bowl often, until well mixed. Divide dough into thirds; wrap in plastic food wrap. Refrigerate until firm (2 hours or overnight). Heat oven to 350°F. Roll out dough on surface lightly covered with equal mixture of flour and sugar, one portion at a time (keeping remaining dough refrigerated), to 1/4-inch thickness. Cut with assorted 2 to 3-inch cookie cutters. Place 1 inch apart onto ungreased cookie sheets. Bake for 8 to 10 minutes or until no indention remains when touched. Let stand 1 minute. Cool completely. Combine all frosting ingredients except milk and decorator sugars in small bowl. Beat at low speed, scraping bowl often and gradually adding enough milk for desired spreading consistency.
