Butter locally made

I had a lovely experience this week. I went on a visit to a small local business that makes butter. Really good butter. 8 people work there. 2 others work in a dairy to prepare the milk/cream and 2 others make cheese from the buttermilk. It's lovely to see small local businesses doing well. It's older than me! LOL

My brother buys his fresh butter and eggs from an Amish family near his home in Wisconsin. I brought 2 lbs. back when I visited in August. I use it selectively so I still have 1 lb. left.

This is the recipe I use minus the fruit fresh. Banana Jam 4 cups prepared fruit (about 11 fully ripe medium bananas) 1/2 cup fresh lemon juice 1 tsp. EVER-FRESH or Fruit Fresh Fruit Protector (optional) 1 box SURE.JELL Fruit Pectin 1/2 tsp. butter or margarine (optional) 6 cups sugar, measured into separate bowl MASH bananas thoroughly. Measure exactly 4 cups prepared fruit into 6- or 8-quart saucepot. Stir lemon juice and fruit protector into prepared fruit in saucepot. STIR pectin into fruit in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. STIR in all sugar quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. LADLE quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. Water must cover jars by 1 to 2 inches; add boiling water if needed. Cover; bring water to gentle boil. Process 5 minutes. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

Sometimes American college sweatshirts and tshirts can be fun gifts. On a funny note, I once asked some people in Japan what they would like for me to bring fo them? They excitedly explained that they had never smelled a skunk, and could I bring them a skunk smell sample? So, I went to a hunting store, bought a small bottle of skunk-on, or whatever it was called. Even wrapped in multiple plastic zip locks, it seeped odor, so I froze the vial of oil inside a small bag of water, then placed that inside a closed thermos flask. I delivered the vial and a small stuffed animal skunk without incident. My friends greatly enjoyed anointing the skunk and sharing the experience. I do realize that i would never ever be able to bring that thru security now, can you imagine the stink homeland security would raise : )

What's wonderful about this recipe and many others, is that you don't need huge amounts to put up a bit for the future. I have finally gotten over canning huge amounts of food! It's easier in smaller, manageable amounts and it makes more sense! I got 8 1/2 pints using this peach recipe, which is good for our way of life now. I'l do it again when I can get more fresh peaches, but I'm looking forward to putting up apple butter, applesauce, etc., as well.

Cook on low 8-10 hours. Remove lid and cook on high until thickened. - - - - - - - - - - - - - - - - - - - NOTES : I quadrupled this recipe when I made it. Basically, I cooked on low all of one day, and then on high uncovered all of the next - really good! Would also be good with chunky applesauce.

That does sound lovely! Really nice that you could visit.

My table butter (European style) comes from a small dairy where the photos in the about us are of the cows and goats, rather than the people. ;)

Is it good?

I'd compare it to any of the Irish butter that I've tried, only cheaper. The Amish lady was selling it for $5/lb. It was in a single block and not sticks.

I would love that. I don't know of any place reasonably close to me like that, though a handful of neighbors sell fresh eggs from their backyard flocks.

I used to be able to buy fresh butter from a smallish cheese producer that was the best butter I've ever had. It came in random shaped blocks and was soooo fresh. They went out of business and I've never had anything comparable.

Butter is only as good as the cows, the pasture, the way the milk/cream is handled. Amish butter could be magnificent or awful.

On TV this week, a celebrity chef made butter to serve with her dish. Easy enough with good cream and a stand mixer. :)

This is looks so good, and how special it is to visit the small producers. I understand the small producers are getting increasingly rare. I see that they may be available at Carrefour, so I will look for the mark the next time I'm in a hyper Carrefour.

When I was little my mum would give me a screw top jar and the cream from the top of several pints of milk. I was told to shake until butter came. It did.
