I've found a friend in ghee.

I like to keep a jar of ghee on hand. It's expensive for sure, but makes a big difference in certain applications. I use it mainly for eggs and stir-fried veggies. It adds a freshness and lightness to these that butter or oil doesn't quite compare. I know it's clarified butter, and that if I wanted to, I could make it, but I don't want to. Have you used it?
