Looking for best short ribs sauce
Comments (4)This is one of our favorite Short Rib recipes and does produce a nice thick gravy. If you wanted it even thicker, I would add a little extra flour to the fat and fond after browning the ribs, before you add everything back for a long braise. The original recipe called for a Vegetable Ragout, but we prefer it with roasted root veggies and noodles. Hope this helps! Alexa ******************************************************* Braised Beef Short Ribs with Root Vegetable Ragoût Gourmet January 1999 Yield: Serves 4 1 small onion 1 medium carrot 1/4 cup plus 1 tablespoon vegetable oil 1 cup dry red wine 3 thyme sprigs 1 Turkish bay leaf or 1/4 California bay leaf 1/2 teaspoon cracked black pepper four 3/4-pound beef short ribs (sometimes called Flanken) all-purpose flour for dusting ribs 2 cups veal stock (16 fluid ounces) 1/2 cup water if necessary Accompaniment: root vegetable ragout Slice enough onion and chop enough carrot to measure 1/4 cup each. In a 1 1/2- to 2-quart saucepan cook onions and carrots in 1 tablespoon oil over moderate heat 2 to 3 minutes, or until softened but not browned. Add wine, thyme, bay leaf, and pepper and simmer 3 minutes. Transfer mixture to a bowl and cool. In a heavy-duty sealable plastic bag combine ribs and wine mixture. Marinate ribs, chilled, turning them occasionally, at least 8 hours and up to 1 day. Preheat oven to 300°F. Remove ribs from marinade and pat dry. Pour marinade through a sieve into a small saucepan and discard solids. Bring marinade to a boil, skimming froth, and remove pan from heat. Season ribs well with salt and pepper and lightly dust with flour. In a heavy ovenproof skillet or flameproof casserole large enough to hold ribs in one layer heat remaining 1/4 cup oil over moderately high heat until it just begins to give off a faint white smoke. Brown ribs, turning them occasionally, and transfer to a plate. Pour off oil from skillet or casserole and add ribs and stock . Pour marinade through a fine sieve into skillet or casserole and bring liquid to a simmer. Cover skillet or casserole with foil or a lid and braise ribs in middle of oven (add water after 3 hours if most of braising liquid is evaporated) 4 hours, or until meat gives no resistance when pierced with a fork. Pour braising liquid through a sieve into a bowl and skim fat. Serve short ribs with braising liquid and vegetable ragout. Comments (17)I use this recipe every Christmas Eve and any time we want a standing rib roast. Perfect every time! Alexa HERBED RIB ROAST Active time: 30 min Start to finish: 11 hr For roast 1 (7- to 8-lb) prime rib roast (sometimes called standing rib roast; 3 or 4 ribs) 1 tablespoon whole black peppercorns 2 bay leaves (not California) 1 tablespoon kosher salt 3 garlic cloves 1 teaspoon chopped fresh thyme 1 teaspoon chopped fresh rosemary 1 tablespoon olive oil For jus 2 cups beef broth 1 small fresh rosemary sprig 1 small fresh thyme sprig 1 garlic clove, smashed Prepare roast: Trim all but a thin layer of fat from roast. Grind peppercorns and bay leaves with salt to a powder in an electric coffee/spice grinder, then transfer to a mortar. Add garlic, thyme, and rosemary, then pound to a smooth paste with pestle. Stir in oil. Rub paste all over roast. Transfer roast to a rack set in a small flameproof roasting pan. Marinate, covered and chilled, at least 8 hours. Cook roast: Let roast stand at room temperature 1 hour. Preheat oven to 450ðF. Roast beef in middle of oven 20 minutes. Reduce temperature to 350ðF and roast beef until a thermometer inserted into center of meat registers 110ðF, 1 1/2 to 1 3/4 hours more. Transfer beef to a large platter and let stand, uncovered, 25 minutes. (Meat will continue to cook, reaching about 130ðF for medium-rare.) Make jus: Skim fat from pan juices. Add broth, rosemary, thyme, and garlic and deglaze pan by simmering on top of stove over moderate heat, stirring and scraping up brown bits. Transfer to a small saucepan and add any juices that have collected on platter. Gently simmer 10 minutes. Skim fat and season jus with salt and pepper. Put slices from roast and serve with jus. Cooks' note: ⢠Roast can marinate up to 24 hours. Makes 8 servings....See MoreHow best to reheat prime rib?
Comments (13)Well, I have to check back in and say "thank you" so much. I went out and bought a can of beef broth and heated it in a small skillet just big enough to hold the 2 slices of prime rib that we cut from the roast. I let those sit at room temp for over an hour. Then I gently heated them in the broth. They were perfect - I have one slice on the rib left, along with the beef broth and 2 rib bones. I'm going to make beef vegetable soup tomorrow from the leftovers. Thank you trixietx. seagrass...See MoreWe are going to a Rib Fest today...!!
