Floof- What's for dinner?

About a month ago I canned a bunch of mayocoba beans. This year is the first time I have had them and they are wonderful. Dinner will be pulled pork (made from canned pork butt) and canned mayocoba beans and salad. What's for dinner today for you?

    DH is grilling riblets and I am making Ree Drummon’s macaroni salad with Wickles Pickles.

    Dh is grilling all beef hot dogs to be served on brioche buns. Mine will be dressed with honey mustard, mayo, and arugula. Sides will be fresh corn on the cob and baked beans.

    woodrose Yes. but that is a biblical Christian viewpoint. The OP asked when/if meet your creator, not when you get to heaven. It is possible to believe in a creator without being Christian. There are also other religions that believe heaven is for all who have lived a good life, not just a chosen few. So I think in the context of the OP we have to look at his more broadly.

    I love dry red wine, mostly Cabernets. I've been buying this Chateau Fage at my local store which is super dry and only $10a bottle. Bogle cabernet and merlot are decent for about the same price. California wines may be good but tend to be more expensive. Stag's Leap is a favorite of ours but we save it for special occasions. Sauvignon Blanc from New Zealand is good for a change. I use it a lot for piccata and scampi type dishes and finish the bottle just for fun.

    My son and DIL came over with the three boys and gave me a gift certificate for my favorite plant nursery. I was supposed to go to my daughter's in the afternoon, but she's just starting to get over a bad cold. So I drove over there and left a care package on her porch: two books that I especially liked (The Enchanted Life of Adam Hope and In Five Years), a couple of boxes of Goodie Girl gluten-free (my daughter has celiac) cookies that look like Girl Scout cookies--appropriate because I was my daughter's Girl Scout leader way back when--and a box of Yogi Bedtime tea. I also made some GF turmeric cut-out cookies for her. Nice yellow color for my Ukrainian sunflower rolling pin! I forgot to add that my daughter gave me a gift certificate for two 60-minute massages. Anticipation!

    Due to various scheduling requests from the kids we opted for dinner at 2:00 instead of 3. It was a great decision. Everything was ready on time, the food was delicious and we ended up sitting around the table for hours enjoying the conversation. Surprisingly the 3 granddaughters (ages 4 1/2, 2 1/2 and 2) all sat together at the end of the table and happily amused each other with minimal input from parents. It was especially nice since this coming Christmas DS, DDIL and 2 DDs will be in California for the holidays visiting her side of the family.

    Half a bag of stir fry vegetables, some beef sliced thin & lightly cooked, blueberries, and a little bit of cooked noodles all mixed into a cold salad with ranch dressing.

    I had pulled pork bbq yesterday from a place in a neighboring town that I always pass by. It's either never opened or I've got other plans but after many years a friend and I finally stopped on our way home from Lexington. Had leftovers for breakfast with Baby Rays bbq sauce, which I like better than the little restaurant's. Had one side, which was potato salad made with what looked like chives and had a distinct suger taste, not Miracle Whip but Mayannaise with added sugar. It had a lot of flavor and for once I liked restaurant made potato salad. Very small mom & pop place. Very limited menu too.

    Since I had potatoes growing in the garden and chives, I decided to make some potato salad. I think some of my potatoes got undercooked, though. So, will have potato salad, breaded and fried chicken wings and some leftover sauteed cabbage (from the garden), onions and bacon I made yesterday.

    Black beans (Cuban spice profile) and rice. It's the leftover meal that I had for my visitors last month, so all I have to do is thaw and zap it in the microwave. No ovens for me, thank you.

    Saturday is always steak night for us. DH was gifted with steaks for Father’s Day and his birthday from Omaha Steaks and Kansas City Steaks. Got a freezer full!

    It's been chilly here today, and overcast with rain on the way. Not very summery, so we decided to thaw some mushroom gravy and mashed potatoes from the freezer and pair them with pork schnitzel. I just trimmed fresh green beans to go with it. DH makes the schnitzel.

    I live alone, don’t cook much anymore, and like to doctor my takeout. I love gazpacho, and got a container of it at Whole Foods. I like to crush watermelon and mix it with the tomato gazpacho. Delicious!

    Tonight we’re picking up Vietnamese food.

    I’ve been prepping for our annual Canada Day BBQ, though.

    The menu is barbecued ribs and chicken, shrimp in garlic butter, potato salad, green salad, pickled beets and dinner rolls.

    Watermelon, rhubarb/strawberry crumble with ice cream for dessert.



    Ribs ready for the grill and homemade BBQ sauce on Monday.



    My husband just finished slicing the garlic for the shrimp.

    Tomorrow, I’m making the potato salad and getting the salad greens ready.

    I want to have everything prepped before Monday. Fingers crossed that nobody brings their

    ”favourite dish” as I’m a control freak in my kitchen. I think everybody knows by now.😄

    One year, a friend of mine brought five lemon meringue pies, yes five, as she thought it would be a good dessert for MY barbecue. LOL, there was no fridge space for them and she couldn’t believe it. I had my own dessert planned. 🙂

    Anyhoo, I’m really excited about Monday. Predictions are for a bit of rain but I have space if we have to move indoors. I usually have around 30 guests, but this year because Canada Day is on a Monday, it will be 20 guests.

    We have bocce, bunnock and axe throwing for activities. 🇨🇦

    The real serious stuff happens with the bunnock and bocce. We have some very serious players. I’m just getting the upper back deck ready


    and my husband is now mowing the activity area (which actually used to be an outdoor horse arena).

    Vietnamese takeout here, too. All I am hungry for is chicken pho with all the fixins. Robert will have something more substantial. They also have good spring rolls.

    We are having a fresh tomato sauce with garlic tossed with angel hair pasta and topped with feta cheese. Also asparagus cooked on the BBQ and dessert later will be a mixture of cubed watermelon, strawberries and grape tomatoes sprinkled with basil. Might top that with feta cheese as well. We love feta cheese and treated ourselves to a piece of "the real deal," expensive though it is.

    Working hard at getting stronger. Most days are good. I am so fortunate to have people around me who truly care. I am very glad to be left handed in my new world where the right side of me doesnn’t work very well. Therapy Achievements, where I am going for outpatient therapy, is wonderful. Thanks for asking.

    I don't think I have room for dinner. Went to a horse clinic today and the host served a huge sandwich fixings buffet with every fresh slicedp deli meat available with several cheeses, bread choices and all of the trimmings and condiments. Two kinds of potato salad in the variety of chips and a lot of other things.

    I'm trying to empty my freezer. We are still in Florida but will head home soon.

    I spent all afternoon yesterday cooking big batches of veggies for my freezer. Purple hull peas, corn and lima beans, all grown by my sister. My SO loves these, me, not so much. I cooked some fried pork chops and cornbread for him to eat with the veggies yesterday. So today, he went and got me some smoked brisket and a side salad. He is having leftovers from yesterday.

    I wanted the day off from cooking. We were @ Krogers grocery shopping. I picked up 8 pieces of fried chicken, a HUGE container of mustard potato salad, Jo Jo Fries, ALL from the Deli. We ate half for lunch.

    FYI The chicken was tiny, overcooked, dry & tasteless. The fries same. The potato salad was soupy, not chunky like homemade. 🍒

    I just ate a big slice of heavily frosted cake, so I'd better call that dinner. i

    It leaves me wanting some coffee. So- cake for supper and coffee for dessert.

    Grilled copper river salmon, corn on the cob, and we'll share a roast potato. DH is cooking.

    We just got home from a memorial lunch that was buffet, but we seldom eat buffet and only if we know who has made what.

    We each had one slice of pizza ordered in from a restaurant we are familiar with and bottled water.

    FYI Costco has dropped the price $1 more/lb on the fresh never frozen sockeye salmon. It's very good, and was $7/lb less there than the fish monger where I bought delicious yearling oysters or the fresh copper river salmon at Northwest Fresh store.

    We had Copper River salmon a few weeks ago. Flavor was as special as usual and it seemed to be a bit cheaper than last year. Worth it at any price, we have down here for only a short time.

    Landlocked really sucks, since everything has to be frozen. Second best is not best.

    After eating a slice of sunflower and flax bread from a bakery, while my chicken wings finished cooking on air fryer mode in my combo oven, I was too full to eat everything I mentioned above. I only ate two chicken wings and that slice of bread.

    Crab and shrimp florentine linguini with tomatoes, spinach, and mushrooms in a lemony butter sauce. Warm Italian bread and chicken soup as a first course. Restaurant meal. I didn't make it.

    Grill baked bluegill from a Wisconsin lake, grilled potato boat (chopped potatoes, onion, red pepper, cilantro, parsley and pepper wrapped in foil) and steamed broccoli.

    rob, you reminded me...when we were in Seattle, so many restaurants advertised fresh Maine lobster...and when we were in Maine, so many advertised fresh Pacific salmon. Go figure!

    I made a huge batch of pesto with the basil that I've been growing (and watering three times a day), and we had that with fettuccine because that's the pasta I had on hand. I will make fresh pasta for the next batch, but it will also be fettuccine - or tagliatelle.

    I'm going to start looking for salmon.

    I don't think it's complicated. People living near an ocean have easy access to a lot of fish and seafood and so are more accustomed to eating it. Providers send it to the markets with most demand.

    Pot roast guinea fowl with haricots and cabbage. Sounds a bit wintery but it's not very warm here.

    Yesterday I made a big batch of my 'taco' filling - which is ground beef, onions, peppers, garlic, tomatoes, corn & beans, seasoned with cumin, chipotle, black pepper, smoked salt and oregano - and I always add a cup or so of finely grated carrots too. Along with a basic green salad of lettuce, tomatoes, cukes, green onion and fresh basil. That will be dinner for a few days. I make a taco salad with crushed chips and salsa on top of the taco filling and some American cheese.

    Working 9-6 at summer playcamp leaves me not wanting to cook after work, so I try to make things for several days' worth of meals.

    @ floral - how do you make that pot roast?

    I don't use a recipe. I'll sautée up some vegetables: onion, carrot, celery or whatever in a heavy casserole. Brown the meat. Put on top of veggies. Pour in a little liquid: beer, wine, stock etc. Throw in a can of beans if I need to bulk it out or if there's no other carb in the meal. Add appropriate herbs. Maybe some jam or jelly according to the type of meat e.g damson with lamb shank, marmalade with duck. Lid on. Remove lid at the end to brown.

    Thanks for replying - oven or stovetop? And how do you judge the time? I've only ever made pot roast with beef.

    Oven. As for timing. It's not critical as long as you don't let it go dry. I just estimate it and check when I think it's nearly done. I do it with any meat or poultry except those that need a crisp top such as pork crackling.
