I think it is funny you want to stay true to the age of the home but want fake plastic counters . Waht exactly are you remoddelling/ The whole house or just the kitchen? We need pictures and a floor plan you post the plan here in jpeg showing every measurement clearly. The pics posted here too but in comments . Are you keeping the original cabinets? My opinion on renovating older homes is bathrooms and kitchens need to be brought into the 21 st century thta is how we live now . The finishes can be a bit more like the original if you want. So the flooring was probably never large format tile and what is the floor in the rest of the house? Can the house handle tile floor? Many older homes have a lot of movement in the joists so cracking tile is an issue. even more so with large format ones. I will wait fot the plan and the pictures DO NOT start another post.

If you can find any sample of the color you are attracted to, it can be matched by a Benjamin Moore or Sherwin Williams store person with the technology in store.

12 X 12" tile is more period appropriate and would be a better idea if your floors are uneven as Patricia says. If it seems too dramatic to you, use gray instead of black with the white, or just do a solid slate look tile. If you have wood floors currently, or wood floors in adjacent rooms, consider that as wood is flexible.
