Noodling around on the internet I happened upon a peppers download from the Univ of Calif. It had an apricot pepper jelly recipe that is very similar to the big batch but using powdered pectin. It has more apricots, more vinegar and less sugar. No onions but I could sub some for some of the bell peppers. I would finely dice the veggies rather than put them in the blender. APRICOT PEPPER JELLY Makes 6 half-pint (250-ml) jars. 1 1âÂÂ4 cups dried apricot halves, finely slivered 300 ml 1 cup red or green bell pepper strips 250 ml (about 1 medium-size pepper) 1âÂÂ3 cup chopped jalapeno or other hot 75 ml pepper, stems and seeds removed 2 cups cider vinegar (5%) 500 ml 4 cups sugar 1 L 1 package powdered fruit pectin 1 package 1âÂÂ2 tsp butter or margarine 2 ml 5 drops red or green food coloring 5 drops (depending on the type of pepper used) 1. Cover dried apricots with boiling water. Leave for approximately 10 minutes. Drain. 2. Combine bell pepper strips, chopped hot peppers, drained apricots, and 1âÂÂ2 cup (125 ml) vinegar in a food processor or blender. Process until partially ground with small chunks remaining. Pour into a saucepan. 3. Mix 1âÂÂ4 cup (63 ml) sugar with pectin. Stir into fruit mixture. Add butter and food coloring. 4. Bring to a boil quickly, stirring constantly. Immediately stir in remaining sugar. 5. Bring to a full boil, stirring, and boil hard for 1 minute. Remove from heat. 6. Skim foam off the top. Then ladle jelly into hot half-pint jars, leaving 1âÂÂ4 inch (0.5 cm) of headspace. 7. Wipe jar rims with a clean, damp cloth. Secure lids and ring bands, and process in a boiling water bath as prescribed in Table 8. Table 8. Here's one that was originally posted by Feidlermeister, whom I haven't seen on this site for several years. If you're on I hope you don't mind me reposting your recipe for Bread & Butter Jalapenos. It's basically a bread & butter pickle recipe using peppers instead of cucumbers. It's not processed, so it needs to be kept in the frig which helps crispness. It also uses cider vinegar. You can use any thick fleshed peppers rather than Jals. FiedlermeisterâÂÂs Bread & Butter Jalapenos I adapted a bread and butter pickle recipe, sustituting pepper-- mostly jalapenos. They are very tasty and can either be stored in the fridge without processing--they stay crispy-- or proceessed in a boiling water bath for 10 minutes and stored at room temp. I usually increase the amts for the brine to be sure I have enough to cover the peppers 1 1/2 to 2 lbs peppers sliced 1/4 " thick 2 medium onions sliced thin 6 ice cubes 1/4 cup coarse ( Kosher ) salt 1 cup cider vinegar 1/2 cup sugar 1 Tablespoon mustard seed 1/2 teaspoon celery seed 1/2 teaspoon turmeric In large bowl combine peppers, onions, salt, and ice. Let stand 1 hour tosssing occassionally. Fill bowl with water and drain vegetables in a colander. Rinse and drain three times to rinse off all salt. Drain well. In large pan combine vinegar, sugar and spices. Bring to a boil. Add the vegetables and when the liquid barely begins to simmer remove from heat. Transfer to a bowl and let cool to room temperature. Put in jars with enough brine to cover vegetables and store in the fridge. Ready to eat the next day but I have kept in fridge for many months. really good--crunchy-not too sweet--not too sour. I have three major chains with "superstore" sizing, Stop&Shop - Shaws - Market Basket, and two smaller name brand chains, Trader Joe's - Whole Foods, within a 15 minute drive of my home and I never see anything but Jals & Serranos on a regular basis with Habs, Hungarian Hot & Thais in season. They do have an assortment of mildly hot in season also. @cottonwood. Yea I saw a few left over hot peppers at HD last weekend and stole a ripe Hungarian Hot Wax, nice sting that kept growing & growing. Might try a few next year for pickling. NECM

Medo, I have been wanting to have a greenhouse ever since I saw Ed's cousin's. He built one for his wife. He's an electrician and installed the mechanical windows that are hooked up to the thermostat. Installed a sprinkler system and tons of racks. It attaches to their family room by sliding glass doors and she can just step right in from the house. Her garden is amazing! She has the most gorgeous yard. They have giant pampas grass, elephant ears, a pond, arbors, gorgeous perennials. Absolutely beautiful. She is able to start her plants so early in the greenhouse and they are so big and healthy come spring. Lucky duck!
