Do I need a new kitchen sink when I replace my countertops?

I am about to replace granite with quartz countertops, but would like to keep the undermount, single basin, rectangular stainless steel sink I have, if I can. Right now the sink and counter are flush, but with the new counter I am planning to have a slight overhang of the counter, with sink edges recessed.

I am getting mixed input from contractors and fabricator about potential issues when trying to re-install the old sink - from needing to take the old sink for several days to make the template, to having difficulty removing it from the old counter.

I am having a hard time justifying the additional expense, especially if I would be getting the exact same sink.

Looking for some knowledge and experience with this, thank you!
