What is the acceptable gap between wall and countertop install

This is my first kitchen redo/ countertop installation. What is the normal acceptable variance for gap between the wall and the countertop? Am I wrong to expect it to be cut straight? It's quartz. The counter top was installed with a 1/8"-6/16" gap on the one side, The wall is straight, but the countertop was cut not even on a straight line and the gap is so big the caulk is falling in. They came back and redid the caulk to match the wall color, but only because they were doing me a "favor". They also dropped something in my copper sink that stained it. It feels like plastic. They tried to scrub it out but it wouldn't come out. Feels almost like plastic resin. What do you think is a reasonable resolution would be?
