How about a brunch? We have done this in the past by assembling egg strata or souffle, sliders, french toast, fruit salad, etc., all the day before. Then you just need to bake the assembled dishes before the meal.

I'd do a taco bar....simple....casual....not ham....or Easter...

Quiche or soup and a salad with some nice bread would be a lovely noon meal.

Eggs are easter. Quiche is easy and deviled eggs and so forth. The world of egg dishes is huge and salads. Fruit and greens and lots of cuc's and carrot sticks for the rabbits etc.

I like the idea of a quiche for this special gathering. You can make however many you need, adding various ingredients for variety. My favorite quiche has swiss cheese and asparagus, for example. Quiche is easy on the budget, too.

Sides could include salads, green beans, asparagus, poached pears, and any manner of fruit or vegetable dishes. My mother could be one hundred percent relied upon to drag out one of her numerous gelatin concoctions to the table, and something like that is still popular in some parts of the country.

Along the same lines, I make frittatas which are essentially quiche without the crust. You might also grill a bunch of chicken breasts or make something like a King Ranch casserole or lasagna.

You don't say how many there will be or if this is expected to be the main meal of the day or more of a lunch...

If it's not the main meal of the day, I'd do soup, sandwiches (deli meats, toppings, misc sides like pickles and slaw, choice of bread), tossed salad, and cake/cookies for dessert.

Last time I had a crowd for dinner, I ordered up a tray of chicken parm to save myself all the work and then served it with veggies, salad and garlic bread...

You could do a lasagne or a roasted turkey breast.

If you have a grill available then you can't get much easier than hamburgers, brats, and hot dogs. I'm sure a couple of the men would be happy to tend the grill if you asked them.

Phoggie, how many for lunch?

I've done Ina Garten's pastitsio and assembled the entire thing the day before. Bake day of. Assign someone a green salad, dinner rolls and you're done....just set your table or buffet and be rested. It's going to serve 10 for lunch easily. I know the recipe reads 8 (for dinner) but those have got to be big appetites.

I have a very simple ziti recipe. Do a tray of antipasto, meats, cheeses. A big green salad. Garlic bread.

I agree with breakfast. Most egg dishes are made a head and baked the next day. 2 different kinds of egg casserole, fruit cups, croissants, bacon, sausage, juice, coffee and whatever else you want. Good luck.

If it's going to be a lunch, why not egg salad sandwiches along with some salads such as potato or macaroni or even just a plain old tossed salad.

I make my favorite "spring" quiche for myself every Easter - gruyere, parsley and dill herb quiche. Swiss cheese can be substituted.

You might make 2-3 small quiche of different flavors.

I like the egg casserole aka breakfast casserole idea too.
