UPDATED- Add trim molding on the stairway and grand room walls or no?

**UPDATED POST WITH PICTURES OF STAIRWAY IN ENTRY WAY. As you can see there is a register/vent so we'll need to get a decorative cover and work around that.

The bottom pic is of the Great room and you can see the large blank walls. We have since removed the large pillars and installed hardwood to match the existing floors in the first photo. We are redoing our fireplace with ledger stack stone all the way to the ceiling, doing coffered ceilings, and repainting everything. Was thinking of adding framing/molding squares to add something to those big empty spaces. We'd also like to update the stair railing and/or newel posts; however, may just settle with painting the railings to match the front door which is a dark walnut.

Located in Nashville, TN. House was built in 1987. Walls are currently blank slates. I'm interested in doing trim molding squares/rectangles on our stairway. Similar to this picture, but perhaps not as much. Can anyone advise about what something like this should cost and how to judge who is qualified to do the job? I envision wanting a sketch beforehand. Is that too much to ask?
