Gozleme. Any tips for good ones?

I'm doing a veggie mezze lunch for a friend and thought of adding some gozleme. Do any of you make these and have any tips? Spinach and feta is the recipe I have.

Thank-you for teaching me a new word! I just realized, I haven’t had much Turkish food. So in looking up the word, I saw a lamb version which looked good.

Also new to me, so I did a quick search and the first images I saw looked amazingly good! How does your recipe compare to what you find on-line?

daybreak2, Since you had good success the first year, something must have changed since you built your "perfect" soil. I'm thinking about several things: 1. Your irrigation water might contain chemicals that have built up in your soil; 2. Your compost might have the wrong pH or be missing important nutrients (what is "soil builder" btw?); 3. Disease organisms might have been introduced into your soil; 4. The amount of sun your boxes gets could have changed. It sounds as if your garden is getting progressively more heat as it moves from box #1 (soaked) to box #4 (too dry) or you're growing plants that use more water in some boxes than others. Here are some suggestions: 1. Have your soil and water tested. 2. Rotate your crops among the boxes. 3. Make your own compost. 4. Fix your irrigation so that it delivers different amounts of water depending upon where each box is located (full sun, part shade, windy or not) and the water demands of the various crops. 5. If those don't work, start over with your boxes in different locations and without the landscaping fabric.

Any good tips for spraying the underside of leaves?

Really quite simple. Make sure the plastic (?) tube attached to the adjustable head if full of water. The water help keep the tubing from colapsing when heated. Now, use a small butane torch to GENTLY heat the tubing until it begins to bend. Slowly ben it until you’ve gone past 90 degrees. Stop heating and let it cool back to firm again. You now have a wand that, when you are standing, will spray undersides of leaves with the spray shooting slightly AWAY from you. A separate $10 sprayer can be kept exclusively for this task.

Croque en bouche - any one made one? Tips?

I've never made a croque en bouche, but have always wanted to. I've made plenty of cream puffs, though, and I think they lose their great texture rather quickly after baking -- but I'm a stickler for always wanting my baked goods to be served as fresh as possible! They're light and crispy when fresh, but if allowed time to absorb moisture they aren't as nice, IMO. You may want to do a trial run with your planned timing to make sure you don't lose too much in texture.

I read your comment too late; have ordered 4 Tip-Ons already. I'll put them to use on some of the lower drawers. I was back on the Blum website this morning, and see that there is a tandembox waste/recyle set with servo drive, which I've found online at Cabinetree Collection, for $215, which may be an option. http://cabinetreecollection.com/store/catalog/product_info.php?cPath=&products_id=1074 nightowl - I called Blum and the tip-on works with all their hinges. (One model only). I suggest you call them to ask about inset.

I would go by whatever they say here: Recipe Tin Eats Gozleme

because It gets the best ratings and they have a version with spinach & feta.

DH has had an obsession with Gozleme for a few years now. We have decided we like it traditionally thin---spinach, feta, garlic, finely diced potato, sweet potato, or winter squash...and not too much filling. A bit of cumin and chili crisp. And an egg .

I do follow Refika on y-tube but we prefer a thinner Gozleme. We don't want too much stringy cheese. Or an abundance of filling. It has been trial and error to get it just right.

Refika is so good usually but a bit sloppy here...

Thank you all. I was making them like Refika says and my friend said to roll out the filled ones to be flatter and we agreed that they are much better à la Sleeve's advice. They were a lovely addition to the mezze. Party music I think that pastry look better than the yogurt one I made. Deffo will make them again. I can understand Mr Sleeve's addiction LOL
