Gozleme. Any tips for good ones?

I'm doing a veggie mezze lunch for a friend and thought of adding some gozleme. Do any of you make these and have any tips? Spinach and feta is the recipe I have.

Thank-you for teaching me a new word! I just realized, I haven’t had much Turkish food. So in looking up the word, I saw a lamb version which looked good.

Also new to me, so I did a quick search and the first images I saw looked amazingly good! How does your recipe compare to what you find on-line?

I assume you are in a clay soil and I am in a sand soil. I have just sat in the dirt and, mostly with hand and trowel, escavated the gold. There is a tool like a hay fork but it has 6-8 tines, closer together (good luck finding one!). This will make the digging go faster, but you will have to accept the fact that some of the tubers will be pierced. These can be used at once with no problem and the others can be cured and stored...Can you say sweet potatoe pie, candied sweet potatoes, etc. I'd suggest that you start digging where you want to plant as the roots can be invasive. Have fun! I have a problem with wire worms getting into sweet poatoes, so enjoy your bounty. They are good for your health.

Any good tips to get a stalled spike to grow again?

LOL, actually i did move it back to a nice sunny SE window, as soon as i saw the spike starting. it's not just against the window, but prolly a foot away. at first i thought was only going to flower from the old spike, but was delighted to see the new one. maybe i'm just being impatient cause i can't wait to see more of the lovely flowers! this is probably one of my fav orchids in my collection. and it's also peloric, which to me, makes it even more special, lol.

Your problem is common. You're at the point where you need to start writing things down. Then don't forget where you put the paper you wrote it on. Laurel is right, it's often best to carry a little notepad with you in your pocket or purse so you can write stuff on it. When you've finished the appointment, or whatever it was you wanted to remember, tear out the page and throw it away. I have to do this. For a long time I'd forget where my notepad was. So now I keep one in my purse, and one on the end table next to my Lazyboy chair. I also need to keep one next to the computer. If it's not on one of those lists, it doesn't get done. And, get this, I absolutely HATE making lists and doing any organizational efforts. I'm a big concept gal, and hate to trouble myself with details. But I've found, that if I don't do it, sooner or later I end up embarrassing myself and looking like an idiot. So I just have to do it. I've found, it didn't kill me, even though I was sure it would. Like you, I can remember the latin name of nearly any plant species on the planet, but I keep calling my husband by the dog's name. Some things we just have to chuckle about, lest we cry. Lainey

any good tips on finding 'free' compost material in Austin area?

yeah, with the drought there isn't much green! Call your local sheriff/police if they have a mounted patrol they will LOVE you and give you as much compost as you can carry. Riding stables, poultry farmers, look on Craigslist. I did lasagna gardening here on the island, the newspaper STILL hasn't broken down, too dang dry. Tally HO!

I would go by whatever they say here: Recipe Tin Eats Gozleme

because It gets the best ratings and they have a version with spinach & feta.

DH has had an obsession with Gozleme for a few years now. We have decided we like it traditionally thin---spinach, feta, garlic, finely diced potato, sweet potato, or winter squash...and not too much filling. A bit of cumin and chili crisp. And an egg .

I do follow Refika on y-tube but we prefer a thinner Gozleme. We don't want too much stringy cheese. Or an abundance of filling. It has been trial and error to get it just right.

Refika is so good usually but a bit sloppy here...

Thank you all. I was making them like Refika says and my friend said to roll out the filled ones to be flatter and we agreed that they are much better à la Sleeve's advice. They were a lovely addition to the mezze. Party music I think that pastry look better than the yogurt one I made. Deffo will make them again. I can understand Mr Sleeve's addiction LOL
