I haven’t checked our market recently but am pretty sure there’s a good supply here. Sriracha is made at the Huy Fong Foods, Inc. facility not far from us in Irwindale, CA. It’s a big building that takes up the entire block.

I think we're still seeing the effects of last year's chili issues.

I agree that Huy Fong is the real deal, preservatives and all, and it's graced many a breakfast here—without the shirt!--so congrats on laying down a supply.

I think the siracha issue will likely last through a good bit of this year at least. It was announced last summer there would be a shortage. It will depend on this springs harvest if there will be a good 2023 production year. It will start rolling out again, and folks will snap it up. That will cause additional delays further out.

Husband freaked out when he couldn't find his large bottle of sriracha at his usual source and did the same...ordered several bottles from Amazon. A few weeks ago I noticed a good sized display at our podunk local grocery store. Real Huy Fong, too.

Shortly after posting this I went to a small supermarket to buy a local habanero sauce and wouldn't you know, there's sriracha! Seriously, I've only been looking at every store I've gone to for like three months now! Order cancelled.

I haven't bought Sriracha in a long time (although I do like it) because I've been buying Habanero sauce instead - or else making my own. I do have some jars of Thai and Japanese chili paste that I use in cooking, but it is not for use at the table. The Japanese one is similar to Chinese garlic chili paste, but the Thai one is more like curry paste, but not exactly.

My current problem with chilies is that I have been unable to find Chocolate Habanero seeds so that I could grow my own chilies, but maybe I will just grow regular Habanero chilies instead. I'll look for plants at Home Depot, which is where I've bought them before.

I've been making chili sauces with Serrano and jalapeño chilies, but it is not all that hot, and I go through them very quickly, which is why I have been buying Habanero sauce

For the past couple of years (when I did not have a Habanero crop), I've been cooking with toasted dehydrated chiles de árbol, but they are somewhat difficult to chop up - pieces of chilies go flying when I chop them. I should make a hot sauce with them so that they would be easier to use. I've made chili oil with them before, but not recently.

You could try a nut chopper or wheel on the arbols.

Have you considered getting the seeds online?

Here's our local habanero sauce. Just heard about it this week but it's been around for a few years I guess. Heard about it on an online discussion where depending who posted it was either very hot, very mild, or nice heat. I guess I'll have to find out for myself, but at the store the price gave me pause and I didn't buy it. Maybe tomorrow!

I've been buying seeds online, and they are not available from the sources I tried. I have some old seeds that I've saved from a couple of years ago, but it's getting late for starting them.

My nut chopper would not work for the chilies. I could use my spice (coffee) grinder, but that would pulverize the chilies into a powder and might leave residue on the blades.

I strain my Habanero sauce with a food mill, to remove the skins and seeds, which are tough and have no flavor. I do not want black pepper in my chili sauce. Instead of carrots, I use red bell pepper for sweetness, and I like that flavor better. It also helps to extend the sauce, as otherwise it is way too hot.

ETA: I did find seeds at Pepper Joe's, and I will order from them.

Oh! My nut chopper has a spring action. There's a W with extra lines shaped dull blade (like a bench sraper with pleats). You push down on the handle, and the blade descends a couple inches on your pile of nuts, on your cutting board, and turns a quarter turn as it retracts. There's a guard around it that contains the pieces and keeps them from flying around. Excellent tool. I could only find a knockoff on Amazon, but there are similar ones sold by all kinds of name brands. Some say onion chopper, which is weird.

Pepper Joe's is expensive, but seem to have the seeds. Sandia does too, for a slightly better price. Maybe try your sources again and see if they're back in stock?

I like TJ's habanero sauce, but I don't know—being TJ’s—if they still have it. It has all the floral notes we love the Havana peppers for, and a pleasant, rather than outrageous, kick. I'm fine with bought, though I don't like some of the standards, like Cholula. I only make roasted serrano sauce, and only because I can't find a good one pre-made.

Walmart online has rooster Huy Fong. Yum!

I'm glad mine wasn't the only pepper crop to fail last year. That heat! No water.... I lost so many plants. I feel vindicated when commercial suppliers with the means didn't keep them going either. I hope we have bumper crop this year. I bought two seed packets and I am going to germinate them all. And baby them all. We freeze them when autumn approaches and toss them in things over winter. We're really hurting on the chilis for our coconut chili crab we love so much

Just wanted to say they had lots of Hoy Fong Sriracha at the market yesterday.…17-oz. bottle was $3.50.
