Renovation advice for old ceiling

My house is from the late 50s, and the previous owner put on an addition in probably the 60s or 70s. I really dislike the ceiling (not to mention the wall paneling). I want to redo the room, including the ceiling. First of all, what do you call this kind of ceiling? Is it some sort of tongue-and-groove thing? It feels a bit like plastic tiles - they're not stuck to anything. It's so low too. Second, does anyone have experience replacing something like this? What are your ideas? I will likely replace that wood paneling too (and windows and shutters).
