Ricky salad - sushi

In 1979 I began eating at a sushi bar on Route 46 in Denville, NJ. The chef's name was Tokio and he made us a chopped tuna salad that we eventually dubbed "The Ricky Salad." As I have moved and traveled, I've introduced this salad to various sushi chefs around the world. In Boca Raton, Floriduh, where I lived for 19 years, there are three sushi bars that still have this on their menu. Every chef makes it just a little bit different, but the basic recipe is the same. It's an appetizer and if you love sushi as much as we do, you'll get hooked on this simple preparation.


To make it easy for a chef I've never met to make a Ricky salad, I've come up with a jingle that illustrates the recipe:


Tuna chop, chop

Spicy mayo mix, mix

Cucumber chop, chop, mix, mix

Krab stick, chop, chop, mix, mix

Tempura flakes, mix, mix

Massago on top with a quail egg
