Question about using whey

I've been getting raw milk from a local person who keeps a milk cow, and I make cottage cheese with it. On line info says the whey is great for soaking dry beans before cooking. BUT on line also says that whey is very acidic and we know that if you add acid (tomatoes, etc) to beans before they're tender, they never get tender.

So, should I soak the beans in whey? I don't have a cow or chickens to feed it to--or even dogs anymore--and the only other option is to pour it onto the compost heap. But sites also warn not to do that too often either because of the acidity.

Any thoughts?
