Comments (4)This one's good, and the cream cheese ribbon is an unexpected treat. * Exported from MasterCook * Pumpkin Ribbon Bread Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup pumpkin 1/2 cup vegetable oil 2 eggs 1 1/2 cup sugar 1/2 tsp salt (optional) 1/2 tsp cloves 1/2 tsp cinnamon 1 2/3 cup flour 1 tsp baking soda 1 cup chopped nuts (optional) Cream cheese filling ingredients: 1 pkg cream cheese -- (8 oz.) softened 1/3 cup sugar 1 TB flour 1 egg 2 tsp grated orange peel Combine pumpkin, oil & eggs; beat well. Add sugar, salt, cloves, cinnamon, flour, baking soda, and nuts, mixing to blend. Pour 1/4 of the batter in 2 greased 7 1/2 x 3 1/2" bread pans. Beat cream cheese, sugar and flour together. Add egg and mix to blend. Stir in orange peel. Carefully spread cream cheese filling mixture over batter in the pans. Cover the cream cheese filling with the remaining batter. Bake at 325 degrees for 1 hour or until bread tests done. Cool 10 minutes in pans before turning out on a rack to cool. Store in the refrigerator. Hawaiian Pineapple Banana Bread 3 cups flour 2 cups sugar 1 t. baking soda 1 t. cinnamon 3/4 t. salt 1 cup chopped pecans 3 eggs, beaten 1 cup vegetable oil 2 cups mashed bananas (about 5) 2 t. vanilla extract 1 8 oz. can crushed pineapple, drained Preheat oven to 350 degrees F. Combine dry ingredients in a large bowl. Stir in nuts. Combine wet ingredients in another bowl. Mix wet ingredients into the bowl of the dry ingredients. Mix just until all is moistened. Put into two greased and floured regular (8.5") loaf pans. Bake for 1 1/2 hours at 350 degrees. Cool in the pans for 10-15 minutes then turn out onto a rack and cool completely. Makes two loaves. Comments (2)I don't know about Rod's Ranch House, but here is the one I make; it's a variation of a Boston Brown Bread: In a bowl combine 1 cup each of whole wheat flour, rye flour, and cornmeal and 1 teaspoon each of baking soda and salt. Stire in 2 cups buttermilk and 2/3 cup molassas, and fold in 1/2 cup each of raisins, chopped nuts, and chopped dates. Divide the batter among 3 buttered tall straight-sided 2 1/2 cup tins, cover the tins with foil, and tie them with kitchen string. Put the tins on a rack in a kettle and add enough boiling water to reach halfway up the sides of the tins. Cover thekettle and steam the bread over low heat, adding more boiling water if necessary, for 2 hours. Remove the foil, transfer the tins to a preheated slow oven (300 F), and let the bread dry for 15 minutes. This is the earliest recipe from KA I could find: KA 1948 Oct 12, 200907:19 PM re: ruth arcone I, too, was remembering enjoying VandeKamps Date Nut Bread and found a recipe that I tried; I was thrilled with how it tasted like the one I remember. Especially when I spread it with cream cheese! Yum! 3/4 cup boiling water 1 1/2 cup chopped dates (fresh) 1 T. butter 1/4 cup dark brown sugar 1/4 cup dark molasses 2 large eggs 1/2 cup all-purpose flour 1/2 cup whole wheat flour 1 1/2 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt 1 cup chopped walnuts Directions: Preheat oven to 350 degrees F. In a medium bowl, pour water over the dates and butter. Stir and let the mixture sit until lukewarm Puree 1/3 of the mixture in a food processor or blender to make a paste, then stir it back into the date mixture. Add the brown sugar, molasses and eggs. Stir until everything is thoroughly combined. In a separate large bowl, sift together the flour, baking powder, baking soda, and salt Make a well in the center and pour in the date mixture. Mix until all the ingredients are combined. Pour the batter into a greased 9x5" loaf pan. Bake for 50 minutes; loaf is done when the top has risen and a cake tester inserted in the center will have some dates clinging to it but no batter. Remove the bread from the oven and cool it on a rack for 10 minutes before turning it out of the pan to finish cooling.
