does this menu sound okay?

My mom is turning 90 this coming weekend. We are having a very small, low key dinner to celebrate. There will be 8 of us and none of the guests are foodies.


It will be at her home so I have to schlep everything there (1.5 hour drive). Her teeth are an issue, so I am trying to go for soft foods for her, but still have it palatable and not too pablumy for the rest.


I am thinking of:

  • either wild rice warm salad (recipe from My New Roots or Ina Garten's orzo salad (the one with roasted veggies and feta
  • mashed potato casserole of some sort
  • some kind of chicken casserole - suggestions?
  • a green salad of some sort?
  • dessert would just be birthday cake with vanilla ice-cream. I've got a nice bakery nearby that makes a traditional cake.

Honestly, any other suggestions are welcome as this seems uninspired and not quite right to me, but I'm trying not to make it a big stress for myself as I know everyone will be happy no matter what I serve. Thoughts from you my go to entertainers?
