Minute roast loose to slice - please see pics

Hi, I put this cookery post on hold due to various distractions, including a dental-caused TMJ-nightmare (which is still unresolved as I have yet to get an MRI via a pain-doc who had detected swelling and put me on prednisone, meloxicam & gabapentin all of which haven't helped, yada yada.)

So because I'm so busy with all sorts of practitioners at present, I'm hoping to simply get Rhetorical feedback based on others' experiences with minute-roast cookery, preferably anyone who's owned narrow 16.5" internal-width ovens like mine. Granted, I don't have an oven thermometer, so i'm hoping for some tips without necessarily having a thermometer.

Note: It was fine to eat, as overall, the slices came out juicy, especially with gravy added. To more accurately describe it - the strands themselves were sorta-dryish, but the slices overall were juicy.
