What's the secret to making soups like Broccoli Cheddar, or Bacon Cheeseburger Soup NOT have the oily or greasy stuff given off by the cheese?

Is the secret using that plastic cheese product that rhymes with Lolita?

I use a good quality cheddar--usually blocks that I grate myself--but sometimes, the finished product seems to be not so palatable looking. Thanks!
