Cook onion in butter until softened. Add minced garlic and cook and stir until frangrant, about 2 minutes. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes. Reduce heat, and stir in cheese cubes until melted. Mix in half and half. In a small bowl, stir cornstarch into water until dissolved. Not exactly what you're asking for, but shouldn't be too hard to adapt, I'd think... Panera Bread Broccoli Cheese Soup Ingredients: 1 tablespoon butter, melted 1/2 medium onion, chopped 1/4 cup melted butter 1/4 cup flour 2 cups half-and-half 2 cups chicken stock or bouillon 1/2 pound fresh broccoli 1 cup carrots, julienned salt and pepper to taste 1/4 teaspoon nutmeg 8 ounces grated sharp cheddar Directions: Saute onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and slowly add the half-and-half (this is called making a roux). Add the chicken stock whisking all the time. Simmer for 20 minutes. Add the broccoli, carrots and onions. Cook over low heat until the veggies are tender for 20-25 minutes. Add salt and pepper. The soup should be thickened by now. Pour in batches into blender and puree. Return to pot over low heat and add the grated cheese; stir until well blended. Comments (5)I cut up the veggies and put the onions ( I use onion) in a heavy pan I use my 8 qt Le Cruset and brown in 1/2 a stick of butter.....when all moisture has evaporated. add 1/4 cup of of flour and cook 1 minute...add 2 cups of chicken broth and cook, sturring to remove lumps until flour thickens a bit. Add your steamed or roasted veggies, and 2 cups of milk....simmer ( do NOT boil!) gently for about 20 minutes and gently stir in 2 cups of grated sharp chedder...2 tsps worchestershire sauce, 1/2 tsp Coleman's dry mustard ( or 2 tsps prepared grey poupon mustard) and stir and heat gently until smooth.
