Greenhaven, in the Pacific North We(s)t, rain is a fact of life, and with it, comes Botrytis cinerea. You are right, some roses, are more susceptible. So, the rose umbrellas gives a degree of protection. But more importantly, for those of use who enter roses in shows, it's one more step to get those perfect blemish free petals the judges are looking for. I also use a lot of discarded styrofoam packing boards for the same purpose. We don't have JB's here, thank goodness, but I guess if you can find a way of sealing off the bottom, it probably will keep those out too. Blackspot? Yes, it does give the upper most leaves from some protection, unless the rain comes with winds. But I think the best part was the ice cream cake, on a hot late June day.

I always use the method from "The Cake Mix Doctor" (and use it for ANY flavor cake mix): BASIC YELLOW BUTTER CAKE 1 yellow cake mix (18-1/4 oz.) 1 stick butter (8 Tblsp.) butter, melted (do not use margarine) 1 cup milk (2% or whole  not skim) 3 large eggs 2 tsp. Vanilla extract Preheat oven to 350° F. Grease and flour two 8-inch round cake pans. In large mixing bowl, combine ingredients listed above. Beat just until blended, and no lumps remain. Pour into pans and bake at 350° F. for 27-29 minutes or until cake tests done. If making cupcakes, bake for 20 minutes.

Here it is: Marlen's Coffeecake 1 box white cake mix with NO pudding in the mix* 1 box instant vanilla pudding (small) 8 oz sour cream 1/2 cup vegetable oil 4 eggs Mix all ingredients together at once. Beat AT LEAST 5 minutes-DON'T UNDERBEAT! Batter will be a bit stiff. Topping: 1 cup granulated sugar 1 cup chopped walnuts 1 1/2 heaping teaspoons ground cinnamon 1 1/2 heaping teaspoons cocoa Preheat oven to 350 degrees. Butter and flour 10 inch Bundt pan. Put half of the batter in pan and sprinkle with half the topping. Add the rest of the batter. Sprinkle the rest of the topping. CUt through well with knife so that topping is mixed with the batter. Bake one hour at 350 degrees. Cool 10 minutes before turning out. Note from Marlen: I like to make a little extra topping and sprinkle some of it on the pan before adding the batter. *If using cake mix with vanilla pudding in the mix, omit the second ingredient.

I've read it is not good for cheesecake but I don't make cheesecake anyway. I have seen recipes for cheesecake using it in Cooking Light magazine, but I dunno if the recipes are any good. Probably not good in danish and the like either. I use it mostly to spread on bagels and toast and english muffins, in which case it tastes just fine. I top it with a dab of homeade jam, yum. Great with lox, since that has a strong taste so I don't miss the extra taste for that application. Fine with those dream eggs, because they were flavored with the herbs anyway, and the neufatchel just added a wonderful creamy texture, even with 1/3 less fat. Since cream cheese is almost pure fat, 1/3 less doesn't make it a diet food by any means, but I like it just as well if not better than cream cheese for what I use it for, so that's what I buy for the calorie savings. I don't mind it in party spreads either. But, my little grandson (a month away from 3 yrs. old) and I did get started on Nate's carrot cake cookies, but since we didn't finish making the dough until an hour before his bed time, and the dough has to chill at least an hour, it'll be tomorrow before we bake them and do the cream cheese part. It doesn't matter. Both DGS and I had a great time mixing up the batter. He got to taste the flour, the sugar, the butter, and all the other ingredients as they went into the mix.
