Easter menu ideas?
Comments (7)Glenda-AL posted this appetizer on the Kitchen Table forum. It should be prepared the day before, can sit out, & was a big hit at my house! Bloody Mary Bites Prepare night before 1 pint cherry tomatoes (about five tomatoes per person) (Best if you dip them in boiling water for 10 seconds, and then plunge in ice water and peel. But I'm not going to peel cherry tomatoes, so stabbed them several times with toothpicks, leaving the pick in the tomatoes.) 2 Tbsp hot pepper sauce vodka to cover For dipping, combine: 2 Tbsp lemon pepper 2 Tbsp celery salt Remove the stems from the tomatoes, and place them in a shallow bowl. Pour vodka over so that they are covered. Stir in the hot pepper sauce. Cover, and refrigerate overnight. To serve, mix together the lemon pepper and celery salt in a small dish. Serve the tomatoes floating in the vodka & the S&P beside so people dip the tomatoes in the mixture. I made Pioneer Woman's jalapeno thingies for Super Bowl Sunday & people loved them. I assembled & froze them a few days before. They can sit out also. Bacon-Wrapped Jalapeno Thingies Fresh jalapenos, 2 3 inches in length (4 to 5 per person) 8 to 10 oz cream cheese, softened Thin, regular bacon, sliced into thirds (about seven slices) Slice the jalapeno in half length-wise. With a spoon, gently scrape out the seeds and white membranes. Wear gloves so the juices donÂt burn your hands. Smear cream cheese generously inside each jalapeno half. Wrap 1/3 slice bacon around the jalapeno snugly, but not tight. Stick a toothpick through the middle of each one; this will keep the bacon from coming off in the oven. Place them on a pan with a rack (so bacon grease can escape) and bake at 375 degrees for 20-25 minutes. If bacon doesnÂt crisp, turnoven to broil & cook 2 to 3 minutes longer. Serve hot or at room temperature. Can be assembled ahead & frozen, then baked frozen. Parmesan Crusted Asparagus 3 Â 4 servings 1 lb asparagus, ends trimmed 3 Tbsp butter, room temperature 1 Tbsp chopped fresh basil 1 large garlic clove, finely chopped or crushed 1 1/2 tsp fresh lemon juice 1/2 cup (packed) grated Parmesan cheese Cook or steam asparagus until just crisp-tender. Err on the side of undercooked, since you will be putting them under the broiler for additional minutes later. Plunge into an ice water bath to retain color and halt cooking. Drain very well. (I went as far as putting them on a clean kitchen towel and patting dry.) Preheat broiler. Arrange asparagus on broiler proof platter. Mix softened butter with basil, garlic and lemon juice. Season to taste with salt and pepper. Put butter mixture in microwave and heat until pourable. Drizzle butter mixture all over asparagus, then sprinkle the parmesan on top. Broil asparagus until topping browns, watching closely to avoid burning. If you had to use a cookie sheet to broil them, slide a flat spatula under them to transfer to your serving platter - this will keep the yummy Parmesan crust attached to the asparagus....See MoreNeed side dish idea and thoughts on dessert
Comments (10)Traditional trifle doesn't have a cookie layer, it has a sponge cake layer. You can make a GF sponge cake easily. This recipe is pretty well bomb-proof, I have given it to people who are positive they can't make a sponge cake and they've been pleasantly surprised: No Fail Sponge Cake 4 eggs, separated 3/4 cup caster (superfine) sugar 1 cup GF cornstarch 2 tsp GF baking powder 1 tsp vanilla Grease and line two deep 8" cake pans. Preheat oven to 350F. Stir baking powder into cornstarch. Whip egg whites until soft peaks appear, then gradually beat in sugar until stiff and glossy. With a metal spoon, fold in egg yolks and vanilla, then fold in cornstarch mixture. Pour batter into pans and bake about 30 minutes, or until cake is springy and starting to pull away from the sides of the pans. Immediately turn out of the pans onto cake racks to cool. You can freeze any unneeded cake for later....See MoreKAW - What's your favorite Easter dessert?
Comments (26)A bunny cake, but mine is made differently. Cut layers in half crosswise. Slice those horizontally. Spread lemon curd and seedless raspberry jam, alternating layers. Set layers on cut edge. Cut a wedge bear one end - you now have a head/neck fir your bunny. Rajesh wedge and put at other end - you now have a tail. Frost the cake with Italian meringue, filling in shape with extra - it will gave a LOT to name a nice plump bunny. Take white paper and cut out ears. Use food coloring to watercolor the inside of the ears so they are pink. Stick them on the head. Use black jelly beans fir eyes, pink for nose. Candied violets are nice if you can find them. Dye coconut green and arrange around bunny - sprinkle jelly beans around grass. Real flower blossoms can also be added. i think this was on TV in the 50's when I was a child and my mother and I made it. Then I made it for children, now grandchildren. No bunny date thus tear - get home from London around 10pm night before and thus old lady no longer attempts heroics! It will be all I can manage to get to church on Easter!...See MoreEasy Easter dessert?
Comments (17)"We are in the grip of a food crisis. Obesity has become a leading cause of preventable death, after only smoking. For nearly half a century we’ve been trying to pin the blame somewhere—fat, carbs, sugar, wheat, high-fructose corn syrup. But that search has been in vain, because the food problem that’s killing us is not a nutrient problem. It’s a behavioral problem, and it’s caused by the changing flavor of the food we eat. Ever since the 1940s, with the rise of industrialized food production, we have been gradually leeching the taste out of what we grow. Simultaneously, we have taken great leaps forward in technology, creating a flavor industry, worth billions annually, in an attempt to put back the tastes we’ve engineered out of our food. The result is a national cuisine that increasingly resembles the paragon of flavor manipulation: Doritos. As food—all food—becomes increasingly bland, we dress it up with calories and flavor chemicals to make it delicious again. We have rewired our palates and our brains, and the results are making us sick and killing us." Ignoer it all you choose...but I pay blue collar taxes to support health care...I am allowed to have a voice in our system of horrific processed food. Why ever consume crap and support business 'big' money not caring about long term health issues. here link...See Morepetalique
