Air fryer Lumpia

I made some lumpia today and started freezing them. I made three of them in the air fryer and they just aren't very good. I coated them with some oil before cooking them but even though they're crispy they just don't taste as good. I do like that they aren't as oily, but flavor is important.

I do love chicken wings, though, made in the fryer. So good! Anyone with an air fryer have a dud frying experience?

Fried chicken. I mean actual fried chicken from scratch. I do not know if I would call it a dud, but it was absolutely pointless. I used my own recipe for seasonings and stuff but I did not know how to convert it to air frying. EVERY person I saw doing it on YouTube or every recipe I read required that the chicken be continuously sprayed with oil during the course of cooking. That seemed inane to me. It was way easier to just fry it the real way and honestly probably ended up with less oil actually in the food that way than the air fryer. It did taste okay but not the same and I wont do that again. I really do not fry chicken enough to worry about trying to make it healthier when I do.

I have never successfully baked a whole potato in it, though I love love love to roast tiny baby potatoes in it.

Amylou, I did a whole potato but one that was sliced, almost all the way through first. It needed more time than what the recipe called for, though. I may try it again.

My favorties so far are frozen, breaded shrimp and just plain salt & pepper chicken wings.

You can make crisped up vegetables and potatoes by tossing in a little good oil and seasoning/herbs/spices and laying them out on a baking sheet and putting them in any good oven at 375-425° F, depending on the oven and type/thickness/density, for 40-75 minutes, depending on all the previous. If you like battered or breaded fried meats, when they're well prepared, they actually steam in their own moisture, which is held in by the coating. You can get a fairly similar result if you spray the outside with oil and put in the oven, but you can also get rid of the coating by using moist cooking methods such as steaming and braising. These kinds of appliances have finite life spans, using a built-in is asking for a problem down the road when you can't get something the exact size and shape. I'd build a shelf that will hold a standalone unit with some wiggle room to avoid a crisis later.

I'm fortunate and have a good size kitchen and large pantry so storage is not an issue but I also don't have a ton of appliances - my KA mixer and toaster are the only ones allowed permanent counter space but even the toaster is tucked into an alcove and not on a working/prep area. @Gooster & @Eileen the french fry method used that inspired all of this is to do a triple rinse on the sliced potatoes or until the water runs clear. Drain but don't bother drying, just shake off excess and put 1/2 the batch in the air fryer. 10 minutes at 385, remove to bowl, toss in 1 tsp of oil, salt or seasoning combo of choice then back in AF another 10 minutes at 385. Obviously I didn't taste them but they look fantastic - I like fries that are basically just short of burned! To me that's easier than parboiling and another thing to wash. But I'm going to give it a try doing this in the Oster next time we make burgers and see if that convection setting is up to the task.

I don't use the oven much in summer. I switch to stove top for most things, if it's too hot to grill outside. For example, for chicken breast, I sprinkle with a pinch of baking soda and rub it all over, to encourage browning. Preheat pan, brown in a bit of olive oil, add a few tablespoons of water, cover and cook until done. The water mostly evaporates and I add a few tablespoons more if needed. Before cooking I make a deep cut into the thickest part and spread it a bit, so it's about the same thickness as the thinner part. I do that no matter how I cook it. Cooks much faster. Much cooler than putting on the oven. I share your non-stick concerns, and don't want another appliance.

I love to air fry veggies and early on burned some broccoli because I wasn't paying attention to the time.

My baked potatoes don't come out light and fluffy on the inside as they are reported to be.

I did a batter and floured fried chicken and it was less than remarkable as AmyLou experienced.

But I DO love potatoes unpeeled, cut in chunks and a/f. They come out like roasted potatoes.

Sausages are great in it, no oil needed.

I had to look up lumpia. Sounds like something I'd love--especially if they weren't oily. Before the pandemic I shopped occasionally in an Indonesian grocery, but that's been closed.

I've been having fun with my air fryer. Quarter-inch thick sweet potato fries are great. So is steak. Even though most people wouldn't choose top round, my go-to cut of beef, it's great cooked in the air fryer.

I've also had pretty good luck with muffins, cooked in silicone cups. Less impressed with my attempt at popovers. I was hoping I'd get decent results because filling a popover pan and baking them in the oven isn't the best plan when you're cooking for one, but they were pretty much unpopped and overly moist.
